What Makes Stratanium Different From Every Other Non-Stick Coating
Conventional non-stick coatings — including many well-known brands — apply a smooth PTFE layer over a plain metal surface. This approach is inexpensive to manufacture but inherently fragile: the coating sits on top, exposed to every utensil, every scratch, and every thermal cycle.
Scanpan's Stratanium technology starts with the squeeze-cast aluminum process, where 250 tons of pressure forces molten recycled aluminum into a textured mold, creating a complex surface profile. The PTFE-based non-stick compound is then applied into the valleys of this texture — physically protected by the raised peaks of the aluminum itself. The result is a non-stick surface that is structurally reinforced, metal-utensil safe, and significantly more durable than flat-coated alternatives.

Stratanium contains zero PFOA (perfluorooctanoic acid) and zero PFOS (perfluorooctane sulfonic acid) — two chemical compounds previously used in non-stick manufacturing that are now recognized as persistent environmental pollutants. Scanpan eliminated them entirely, long before regulatory pressure demanded it. How to Maintain Your Stratanium Coating
Stratanium is the most durable non-stick coating Scanpan has ever produced — but like all precision surfaces, it benefits from proper care. Follow these guidelines to keep your coating performing at its best for years.
Avoid Aerosol Cooking Sprays
Aerosol sprays (like PAM) contain propellants and additives that build up on the Stratanium surface over time, creating a sticky residue that is nearly impossible to remove. Use a small amount of butter or liquid oil instead. A well-maintained Stratanium surface requires very little fat to cook with.
Never Overheat an Empty Pan
Heating a non-stick pan with nothing in it can cause the surface to reach temperatures that degrade the coating. Always add oil, butter, or food before placing the pan over high heat. For Stratanium, medium to medium-high heat is sufficient for the vast majority of cooking tasks — the aluminum core distributes heat so efficiently that very high heat is rarely needed.
Hand Wash When Possible
While most Scanpan Stratanium pans are technically dishwasher safe, the harsh detergents and high temperatures in dishwashers can gradually dull the surface over many cycles. A quick wash with warm soapy water and a soft cloth extends the life of the coating significantly. It takes under 60 seconds.
Use the Right Heat Level
Stratanium-coated pans heat up quickly and retain heat well due to their cast aluminum construction. Start on medium heat and adjust as needed. High heat is appropriate for boiling water or searing — but for scrambled eggs, pancakes, or sauteed vegetables, medium-low is ideal. Matching heat to task preserves the coating and improves your cooking results.
Store With Care
Stacking pans directly on top of each other can scratch the Stratanium surface over time. Use pan protectors or a clean cloth between stacked pans. Alternatively, hang your pans or store them on a dedicated rack. A small investment in storage protects the coating for years of additional use.
Avoid Sharp Utensils at the Edge
While the cooking surface is metal-utensil safe, the sidewall and rim of the pan near the edge can be more vulnerable. Avoid scraping hard along the very edge of the pan with sharp metal tools. Use silicone, wood, or nylon utensils in tight corners, and reserve metal spatulas for the flat cooking surface where the textured Stratanium protection is fullest.
